Making Dough

The videos on this post on dough making came about due to requests from a couple of subscribers. We had always intended to make a video on the process of bread making but wanted for the current travel restrictions to end so we could use the professional services and expertise of Caterina Sullivan. We still intend to do that, but in the meantime these series of videos shot unplanned and unscripted will have to suffice.


There are a few awkward moments that will give you cause to laugh; we don't mind as long as the bread you make is fantastic.


The process I use to make sourdough bread takes a minimum of around 10 hours. Therefore if you want bread for lunch you probably need to start at 2am. After many years of working those kind of hours I have no desire to start doing that again. Instead what I do is make the dough the day before then hold the formed loaves in the refrigerator overnight to bake the next morning; an altogether more pleasant experience.



The first video on the actual dough making starts 3 hours after the sourdough starter was activated with a feed of flour and hot water.
