We said when we published the recipe for Chrissie's Fig and Walnut Slice that it was based on her late mum's Phyllis Valvasori very popular Date Slice. This slice is simple and old-fashioned but delicious. We publish the recipe in her memory.
Ingredients
165gm self-raising flour
Pinch of salt
165gm castor sugar
85gm desiccated coconut
1 large egg
120gm unsalted butter, melted
200gm (1 cup) dates, pitted and roughly chopped
2 tbsp lemon juice
Method
Soak dates in lemon juice for at least 10 minutes.
Sift flour and salt into a mixing bowl.
Add sugar and coconut and mix through.
Add butter and soaked dates and mix until combined.
In a separate bowl beat the egg and add to the other ingredients and mix until incorporated.
Place into baking paper lined slice tray (approx 26cm x 18cm) and smooth with a fork.
Bake at 180C for 20 to 25 minutes until a light golden colour.
Cool in tin then cut into 16 pieces.
Store in an airtight container.
